School is back in session and those of us that are paleo and glutenfree are looking for lunchbox ideas for our kids, or even for adults to take to work Lets face it, we all know that allergy friendly and gluten free breads can be expensive. We also dont always have time to bake our own. Not only that, what if. Before discovering the whole paleo or primal eating philosophy, and going mostly grain free, sandwiches were my go to lunch. Especially when I was heavily into my sourdough bread baking phase. Its been a long time since I last had a sandwich for lunch. And the thing is, I dont really miss them. There are so many other quick healthy lunch options. So if youre trying to eat gluten free or even if youre keen to break out of your own sandwich rut, here are 1. Perfect for when you need to be able to make lunch in advance, even the night before and take it with you. Cutting out wheat, rye, oats, barley and more means being inventive when sourcing alternatives. Our nogluten suppers are wholesome and nourishing just be careful to. These satisfying healthy lunch foods are perfect for sending to school or work. At first, glutenfree snacks seem challenging, but really the list below looks very similar to what you might have eaten as a snack before you went glutenfree. Most offices have some sort of kitchenette with at least a sink and a microwave. Ground Turkey Meatloaf. Why not make the most of it and cook lunch at the office. Much cheaper than going out AND a great little break from the stress of the day. Especially in the cooler months, a warm lunch can give a real boost to your day. It took me years to overcome my childhood fear of frozen peas. Ive found the secret is to make sure you dont overcook them. All they need is a quick soak in boiling water to defrost. Pop the kettle on to boil. Place peas in a heatproof bowl. Cover with boiling water and stand for 2 3 minutes or until peas are defrosted and bright green. Drain peas and pat dry with paper towel. Drizzle with a little extra virgin olive oil. Squeeze over lemon. Season. 4. Toss in mint and almonds. Serve with tahini spooned on top. VARIATIONSnut free replace almonds with chunks of avocadosesame free replace tahini with a few handfuls of grated parmesan or chunks of goats cheese or feta.
