Im a pretty average cook. I chose this recipe because it was simple. The first time it turned out fine, the times and temps were spot on for my 1 14 lb. I would make it for a nicer everyday meal but wouldnt make it for a dinner party. Since reading the recipe it sounded a little bland, I used thyme and sage in addition to rosemary and put a clove of garlic into the cavity like some other reviewers recommended in addition to the herbs and lemon. Instead of olive oil, I made herb butter by melting butter and adding minced fresh herbs and then I rubbed the hens with the mixture before roasting. I used kosher coarse salt. The hens came out nice and golden though the skin wasnt crispy and they were very moist. The reason for the 3 stars is that the meat still tasted kinda bland even though the pan juicessauce was good. If I made this again, I would rub the hens with salt and dried herbs and let them sit overnight and then rinse them before going through the steps listed in the recipe. I think that would give the meat a bit more flavor. Or maybe use a flavor injector. So overall good solid recipe but it lacks complexity. We did like the roasted garlic though. I noticed that those. Forgot to say in my previous review that I threw a garlic clove or two into the cavity of each hen, to infuse them with a little more flavor. These were pretty easy and delicious. My whole family loved this dish. The only change I made was using an immersion blender to puree the garlic into the sauce, which helped thicken it. I overcooked my hens a little, but that was my fault. I had a hard time getting a good temperature reading on those little buggers. Very easy to make, delicious you can really taste the lemon, it makes excellent sauce as well. I cooked some asparagus in it and that was excellent.
